Banku is a staple food all over Ghana.  As in many parts of the world, Africans enjoy fermented foods which also have a host of health benefits (many are anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, and anti-diabetic). 
Banku is a blend of fermented corn and cassava dough, prepared in hot water into a smooth, whitish paste, often then formed into a ball (like a large dumpling) and served with soup, okra stew or with fish served with pepper and onions. Free of gluten.
